In North Carolina, when there is something worth getting everybody together for, a reunion, a wedding, a church dinner on the grounds, somebody cooks a whole hog. It takes all night and more than one pair of hands. Then the guests come and pick the meat off it themselves, which is where the name comes from. Nobody is served. Everybody stands at the same table, talking to the people next to them, and by the end of the afternoon half the county knows each other a little better. Business here has always worked the same way: at the table, by name.
